fat side up, 30ish minutes per pound. I start checking on mine at about 22-25 minutes per pound depending on outside temp, wind, etc. I like to inject with a little liquid smoke/balsamic vinegar/olive oil/garlic juice, and use a cajun spice/six pepper blend/smoked paprika rub.Never fried that before... With extra time at home just might.
