Made this today. Good stuff.
You need:
Butter
5 eggs
Day old bread (your choice - I used French bread), cubed
1/4 cup chopped chives
1/4 cup shredded cheddar cheese
3 crumbled strips of bacon
About 1/2 cup half & half
Fudge these as much as you want. More/less/different cheese, more/less bacon (hint: the correct answer is more), add in some home fries, whatever.
Preheat your oven to 400 degrees.
Butter the bottom and sides of a 10" cast iron skillet. Just grab the stick and brush it directly on the surface. Line the bottom with the bread.
Add in the eggs. Try not to break the yolks.
Spread the chives and bacon evenly over the eggs and bread. Then add the cheese on top.
Pour in the half & half - use enough to cover the bottom of the pan.
Put the skillet in the oven and let it cook for 18-20 minutes.
Let it cool, slice and serve.
