So, tonight she didn't want to cook and I didn't want to go out. Found some shiritake noodles in the pantry. Decided to try to make alfredo for first time. No heavy cream, so I used half and half with a little ricotta to thicken. Worked out nicely. Thin sliced some portobello mushrooms and sautéed them in olive oil and pomegranate red wine vinegar. Added a touch of red pepper flake and she was happy.
