Super easy. Super tasty. Healthy-ish. And you can show off your Cornhusker pride.
Grilled chili-lime corn:
4 whole corn on the cob
4 tbs butter
1 lime
1 tsp Chili powder (use cayenne if you like extra spicy, chipotle if you like smoky; it's up to you)
1/2 tsp Garlic and Onion powder
1/2 tsp Kosher salt
Shuck and wash corn. Melt butter. Squeeze whole lime into butter. Stir in chili powder, garlic powder, onion powder and salt. Brush over corn and grill. I like my corn to be just a little bit burnt, but cook to your desired taste. I usually brush any remaining butter mix onto the corn while it's grilling. Seriously a great addition to any grilled meal.
