Been trying to perfect a nice Tzatziki recipe. My latest:

2/3 of a cucumber (peeled, de-seeded, and finely chopped).
2 cloves garlic minced.
12 ounces greek yogurt.
not quite but damn near 2 tablespoons olive oil.
a little bit of dill (finely chopped)
a pinch of cayenne.
2 pinches of paprika.
a dash of cumin.
6 or 7 drips of sriracha
salt and pepper to taste.

whisk it all in a big bowl for a few minutes/cover and refrigerate for an hour or two.

Put your cuke in a sieve and sprinkle some salt on it, let it drain for a few hrs. I prefer 50/50 mix of sour cream and yogurt
