@Squatchsker what kind of sausage did you make? Got the tools to stuff, but never have. Any suggestions?
Since it was my first run at it, I just used a simple pepper/garlic recipe. Used 17 mm collagen casings I got off of Amazon. Cut them at around 8" when done, nice little snack sticks.

I used this recipe as a model, but I did not use sugar or the hot sauce since the wife will be eating them too. If I want them spicier, I can add a bit of sriracha when it is time to eat.
