I am always looking for new ways to make things. I decided to try something simple for dinner. I was in the mood for Mexican, and I wanted simple tacos and rice. Here was I came up with for dinner:

4 packets of taco seasoning, McCormicks I believe
1 - 5 lb Boston Butt

I put these together in my slow cooker for 18 hours on low.......big hit.

I also made Puerto Rican Rice:
1 head of garlic, peeled, diced
2 onions, peeled & diced
4 oz butter
1 TBSP Olive Oil
1 packet of Goya Sazon Seasoning

I combined these in my pot, and cooked them until the garlic started to soften, then I added 4 oz of Sofrito to the pot with 3 cups of water.
After the pot comes to a boil, I added 3 cups Minute Rice.
When the water comes back to a boil, cover and turn off heat. Let sit for 5 minutes, fluff, and let sit 2 more minutes.
While the rice is cooking, heat up as many tortillas as you want.

Set the table & enjoy. :Biggrin:

is the crock pot on the low setting?

Did you add water or anything to the crock pot or just the roast and seasoning/dry rub with no moisture/fluids?
 
I added enough water to come up 2/3 of the roast. Crock pot was on low.

If you want to try a twist on mofongo, here is one I do.

Slice and fry 3 or 4 plantains
Slice and fry 3 or 4 bananas (or sweet plantains if you can find them)
Cook several strips of thick bacon
combine in a food processor
