I like a good ribeye steak. Seasoned different ways.

What do you like to cook up for red meat? And how do you like to do it?

I'm needing to try something new.

Ribeye's are hard to beat, charcoal grilled medium rare to medium depending upon how thick it is. I also prefer mine dry aged.

Want to try something interesting, Korean barbeque with the beef sliced real thin.
 



I've only had it twice, but, it was some of the most tender, tastiest meat I've ever had the satisfaction of eating. A casino had it on their upscale steak house menu, unfortunately, it is no longer on their menu. Antelope steak. They seared it with a salt and pepper seasoning. Served with asparagus and garlic mashed, it was like a slice of heaven to eat. This maybe doesn't help you as I didn't cook it obviously, but if you can get the Antelope fresh, it'd be great seared over a hot bed of charcoal.

Porterhouse, med rare over coals, with Montreal Steak Seasoning liberally applied, sauteed mushrooms, onions & garlic spooned over, with a baked potato on the side.
 
Ribeyes are, IMO, so far above the other cuts of steak that it's not really a competition.
I also like, on occasion, creatively prepared short ribs. And, a few times a year, lamb really hits the spot.

Ribeye would top my list, marinated in soy sauce with a dash of msg and add a bit of crumbled blue cheese
 



Well aged, butter-seared crisp, infused tenderloin. A ribeye prepared the same way ranks just a hair behind. Maybe they are equal. I could care less which would be ranked higher now that I'm thinking about it. My mouth is watering.
 
Back when I was a youth, every year on new years for the bowl games, a friend of mines father always had a party and served "tiger meat" fresh ground sirloin, raw. He mixed in garlic and onion and you ate it with crackers. It was delicious,

My dad used to make tiger meat once a year, it was a very popular dish and I never understood why he only made it once a year.
