Smoked pork loin with pesto, black olives, and dehydrated cherry tomatoes. Dusted with salt/pepper/tomato powder.

How did you remove the bones so perfectly?
very very sharp knife. i kinda mangled the center meat if you look at the sandwich. i wish i had used regular sauce instead of a sugar free sauce as well. the sugar free sauce didn't glisten and caramelize like a sugar based sauce would have. doesn't effect the taste, just the presentation.
I have used this as a substitute, and it adds some good depth and keeps the sugars down. My 'beetus and my palate both approve.

I prefer brioche buns with sesame seeds. If I'm feeling up to it, I sometimes toast the bun to add that extra something too it but its still great w/o the toasting. Add your favorite drink (Guinness for me) and your all set.....
