My wife follows several fitness people on social media who post healthy recipes and asked me to hook this up for her yesterday. This is supposedly an Australian deal and it didn't sound very appealing at first but I LOVE avocados so I thought I'd give it a shot and its really simple to make.
2 avocados
4 eggs
4 slices rye bread
Juice of one lime
Salt
Pepper
Feta cheese
Sriracha/garlic powder (my touch, I found this at the store two weeks ago and it was like a revelation)
Peel and mash avocados, salt, pepper and lime juice (damned near guac at this point, but not quite)
Fold in feta cheese
Poach eggs
Toast bread
Spread avocado mixture onto toasted rye bread and top with poached eggs. Easy peasy and it is incredibly good. Next time, I'm going to top it with bacon.
