Easy Mexican Rice

Here is a simple way to make Mexican Rice, well simple enough to me. This didn't take all day, rather, a few extra minutes sauteing the onions.

1/4 stick real butter
2 onions, diced
Salt & Pepper to your taste
2 cans or Rotel, mild
4 packets of Goya Sazon, with coriander & annato
22 oz of water
4 cups Minute Rice

I sauteed the onions in the butter until translucent, adding Kosher Salt & freshly ground black pepper to my usual amounts. Then I added the Rotel & Sazon packets. Let that cook for a few minutes, and then I added the water. Why 22 ounces? Because that, along with the butter & Rotel makes 4 cups of liquid, which is the same amount of rice, :D. Bring the pot to a boil, add the rice, stir and let it come back to a boil. Cover, turn off the heat, stir after 5 minutes, and 5 minutes later, you have Mexican Rice. Enjoy!
