1 can Cream style corn
1 can whole kernel corn(undrained)
1 stick butter melted
2 eggs beaten
1 medium onion chopped
1 4oz can mushrooms(drained and diced)
1 8.5 oz package Jiffy corn muffin mix
2 cups grated chedder cheese (divided) Or any grated favorite cheese you may like.
Mix all ingredients in large bowl and poor into 9x13 casserole dish.... (save 1 cup of cheese to put on top of mixture), bake @ 350 for 45-60 minutes or until toothpick comes out clean.
Easy to make and well liked by most.
Note: My father like this recipe with added chopped oysters.
