Agreed. Thanks, BB. I was going for a temp at which I could pull it instead of slicing it. When you pull yours at 140, do you slice it when serving? Trying to figure out where I went wrong.I think tri-tip is best cooked medium rare. I smoke and cook at 250 until the meat hits 120 and then sear it to 140 and pull it off.
