Prime Rib

Okay, so where is a good place to buy the meat? Would Costco be alright or is it better to get it from a butcher shop so I can chose what side of the ribs it comes from?

I buy a whole prime rib bone in at costco choice or prime and if not using the whole thing cut steaks out of the rest and freeze for later. as a thought you can use left over prime rib for fabulous cheese steak sandwiches for the football games.
next year i will tell you in advance how to age it.

Always remove and tie the bone back on. Saves so much time later.

I rub mine with bacon grease and then pepper, salt, rosemary, thyme, garlic powder, onion powder, paprika and cayenne.

I pull it at 115. 25 minutes a pound at 225.

For the Au Jus, I cook the bones, onion, carrots, celery, soy sauce, red wine, a bay leaf and a tsp of the rub above. I add beef broth as well. Adjust to the amount you need.
