How do you like your steaks? Medium rare for me, cooked on charcoal

Medium rare for sure. If they are going to miss, it should be on the rare side.
 
1.25 to 1.5 thick, dry brined at least 3 hours prior to cook, hickory wood chips for smoke and medium rare please.
 



Rare please, with a sweet potato and salad on the side....and a beer...or three.
 
First of all, never anything but my own animals. They live in what's called a "no stress environment" and are crazy tender. As for cooking . . . During the summer, bit of kosher salt, charcoal only, medium rare. During the winter, pan seared in real butter.

I usually order rare plus at restaurants because they over cook. And if they don't it's yummy that way too!
 




Yeah, I go rare to med rare, just for the over cook thing, unless I know the restaurant, then I order med. rare.

Where are you located? Not sure what a, no stress environment is, lots of pasture roaming? In interested
 
Medium rare to medium. But I'll eat it pretty much no matter what. One thing I do NOT like is previously frozen beef.

We live about 30 minutes out of Lincoln. We raise two bucket calves at a time (even a steer needs a friend, right?), for us and some family members. They have lots of space to graze, but the no stress part really comes in because they're blocked from the wind at all times and if the weather isn't to their liking, they just need to lay down under one of the trees or walk into the barn and crash on their straw beds.

My cousin who supplies the calves refers to them as having "won the lottery" to get to come to our place. As far as a steer's life, they've got it pretty good.
