    pinto question

    Do you add the salt/pepper & seasonings after cooking in the crockpot (8-10 hours) or do you put it in at the beginning???? Any help would be appreciated!

    I cook the beans several hours (1 to 2), rinse in warm water, then cook the rest of the way in water or the desired liquid along with the seasonings for the balance of the time needed. Some put in the seasonings and ingredients at the beginning of the cooking process. Not sure it makes much difference.

    Give it a try either way and see what you think for the next time around.

    I've heard that adding salt in the beginning inhibits water absorption. I usually cook them with a couple of dried chilies, cumin, and Mexican oregano. I add salt and anything else after their done (depending on what I'm gonna do with them.)

    Season about half way through the cooking process. Salt to taste nearer the end. The seasonings will cook with the beans and make for a better meal.

    Thanks for the tip! I might add some tex-mex seasonings or just add bacon.....
